The great news about the roasted mushrooms is that after being prepared they will hold well for several day to a week in the refrigerator. They are great on sandwiches, in pastas, quickly grilled for a vegetarian option and any other application where a quick mushroom component would help. Feel free to roast more than you’ll need for your recipe and enjoy having some ready to use.
My preference is to cut the stem mostly even with the bottom of the mushroom. Use a small knife to carefully trim the edge of the mushroom, this is primarily for a better looking final product. The next step is the most important in my opinion.
